Disney fan Ashley Craft grew up near Anaheim’s famous theme park, and eventually landed on staff at Disney World. So when she started her own blog, Ashley Crafted, you can guess what she specialized in. Now, she’s turned her Disney-esque recipes into a best-selling cookbook, “The Unofficial Disney Parks Cookbook” (Adams Media, $22) with 100 recipes for beloved theme park treats, from churros and Disney corndogs to the Dole Whip served at Walt Disney’s Enchanted Tiki Room in Adventureland.

The pineapple-flavored treat, which originated on the Dole Plantation in Hawaii, is “arguably the number one cult-classic favorite treat of all time at Disney Parks,” Craft writes in the book.

At Disneyland, the frosty concoction is made with water and a powdered mix, made by Dole, and whipped into its signature form using an industrial ice cream maker. Here, says Craft, is how to make it at home from scratch, using a regular ice cream machine.

Dole Whip

Serves 6

Ingredients

1 cup room-temperature water

1½ cups granulated sugar

2 cups chilled pineapple juice

1 tablespoon lime juice

Directions

‌In a medium microwave-safe bowl, combine water and sugar. Microwave for 1 minute, stir, then microwave 1 more minute and stir to create a syrup. Cover and refrigerate at least 2 hours.

Pour pineapple juice into ice cream machine and add ½ cup chilled syrup. Add lime juice. Follow ice cream machine instructions and run about 20 minutes.

Serve immediately or transfer to a large plastic container, cover and freeze overnight for a harder consistency.
