Sufganiyot are great, but who has time to make doughnuts? This highly-snackable, salty-sweet dish from San Francisco Jewish food expert Micah Siva of Nosh with Micah comes together in minutes and checks two Hanukkah boxes: Dessert and fried potatoes. No one ever said you had to do the frying. Let Frito-Lay worry about it. Slice and serve these crunchy treats instead. Just don’t expect them to last. (And if you still want to make latkes, try Siva’s Family-Style Skillet Latke, which is lovely sliced and topped with a poached egg, smoked salmon or applesauce).

Potato Chip Marshmallow Squares

Serves 16

INGREDIENTS

¼ cup butter, unsalted

10-ounce bag mini marshmallows

4 cups crumbled ridged potato chips

2 cups crispy rice cereal

Flaky salt, for serving

DIRECTIONS

Line an 8-inch square baking pan with parchment paper. Generously grease using cooking spray.

In a large pot over medium-low heat, melt the butter. Reduce the heat to low and add the marshmallow, stirring until completely melted.

Remove the pot from the heat. Immediately add the crumbled potato chips and rice cereal, stirring with a rubber spatula until well combined.

Transfer the mixture to the prepared pan, pressing down (I like to coat my spatula with cooking spray to prevent sticking) until compact. Sprinkle with flaky sea salt.

Let cool at room temperature for about 30 minutes before slicing.
