Makes 2 loaves
Ingredients:
3 cups sugar
1 cup vegetable oil
3 eggs
16 ounces Libby’s pumpkin puree
3 cups all-purpose flour
1 teaspoon each cloves, cinnamon, nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup chopped nuts, optional
Directions:
- Heat oven to 350 degrees. Grease two 9-by-5-inch loaf pans; line bottoms with parchment paper.
- Mix sugar, oil, eggs and pumpkin.
- In another bowl, combine flour, spices, baking soda, salt and baking powder. Combine the wet and dry ingredients, mixing just until combined. Stir in nuts if using.
- Transfer mixture to prepared pans. Bake until a toothpick inserted in the center emerges cleanly, about 1 hour.
