Makes 2 loaves

Ingredients:

3 cups sugar

1 cup vegetable oil

3 eggs

16 ounces Libby’s pumpkin puree

3 cups all-purpose flour

1 teaspoon each cloves, cinnamon, nutmeg

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

1 cup chopped nuts, optional

Directions:

  1. Heat oven to 350 degrees. Grease two 9-by-5-inch loaf pans; line bottoms with parchment paper.
  2. Mix sugar, oil, eggs and pumpkin.
  3. In another bowl, combine flour, spices, baking soda, salt and baking powder. Combine the wet and dry ingredients, mixing just until combined. Stir in nuts if using.
  4. Transfer mixture to prepared pans. Bake until a toothpick inserted in the center emerges cleanly, about 1 hour.
