15-ounce can black beans, drained and rinsed
15-ounce can pinto beans, drained and rinsed
14.5-ounce can petite diced tomatoes
15-ounce can sweet corn, drained
12.5-ounce can chicken breast, drained and flaked
28-ounce can green enchilada sauce
14-ounce can chicken broth
1 packet taco seasoning
½ teaspoon ground cumin
½ teaspoon chile powder
½ teaspoon garlic powder
Garnish: Lime wedges, shredded cheese, tortilla chips
Directions:
Combine all the ingredients, except the garnishes, in a large pot and bring to a boil over medium-high heat. Lower heat and simmer for 20 to 25 minutes. Serve with lime wedges, shredded cheese and tortilla chips, as desired. Makes about four to six servings.
