Serves 20
Ingredients:
Crust:
1 cup butter or margarine, softened
2 cups all-purpose flour
½ cup powdered sugar, plus more for garnish
Filling:
2 cups granulated sugar
4 large eggs, beaten well
6 tablespoons lemon juice
1 large lemon rind, grated
¼ teaspoon salt
Directions:
- Heat oven to 350 degrees.
- Using a food processor, thoroughly mix the butter, flour and powdered sugar. Press dough firmly into a 9-by-13-inch pan. Bake for 15 minutes.
- Using an electric mixer or food processor, thoroughly mix the filling ingredients. Pour mixture over the baked crust and bake for 25 minutes, or until top is set. Cool on a wire rack.
- Dust top with powdered sugar and cut into 20 squares.
